Lupin Protein Balls
60g Lupin Flake
300 g raw whole almonds or walnuts
30g plant based vanilla protein powder
16 fresh pitted dates
2 generous tablespoons cacao powder
1 tablespoon natural vanilla extract
1/2 teaspoon ground cinnamon
Shredded coconut, goji berries, cacao and crushed nuts for rolling
Preheat oven to 170°C and line an oven tray with baking paper
Spread Lupin Flake on tray, toss in coconut oil and lightly toast in the oven for roughly 10 – 15 mins or until golden.
Process almonds, cinnamon, protein powder and cacao powder in food processor or blender until the mix looks crumbly.
Add dates, vanilla extract and Lupin Flake then process again until the mix starts to come together.
Add a splash of water if you need to so that mixture is soft and forms a soft ball.
Form into 14 decent sized balls.
Roll in coconut or any of the suggested ingredients above and store in the fridge until you feel like a snack or quick meal on the run.
Can be stored in the fridge for up to 4 weeks.
